Serves 4
3/4 cup boiling water
1/2 cup cracked wheat/bulgar
1/2 cup chopped parsley
1/4 cup mint leaves
1/2 cup finely chopped onion
1 tomato, diced
Dressing:
3 tbsp olive oil
2 tbsp lemon juice
pepper and salt to taste
1. Pour boiling water over wheat. Stand for 20 mins.
2. Add parsley, mint, onion, and tomato.
3. Combine the dressing ingredients. Toss to mix.
For a more gourmet take: serve on top of lettuce, sprinkled with pine nuts. Enjoy!

I've got a cat calender too!
Thanks for the recipe...I've been sourcing for pepper crab recipe for you, but no luck...would you be interested in a singapore chili crab recipe instead?
Thanks, trish, I think I might have found one "cheat" recipe for the pepper one. LOL. Chili crab sounds fab, do pass on the recipe, I'm drooling now.. slurp... wipe the keyboard...
I once made tabouli which was a disaster. Too much bulgar and it was very gritty. I've been affraid to make it since as this was one of hubby's staples growing up. I can do a mean stuffed middle eastern stuffed zucchini which is a winner. I'll give this recipe a try thanx music :) Cute cat :)
BO, if you'd like a finer result: use couscous instead, adding the dressing straight to the couscous before pouring the boiling water on it. :)
